The Best Jo Jos
My Favorite Jo Jos. Salty, herby (is that a word?), delicious, the perfect amount of crunchy and soft. These are always made with our homegrown taters! The best!
No. I don’t use an air fryer or a fancy kitchen appliance. Just an oven at about 450°
• About 6-8 medium potatoes cut into wedges (leave peel on)
• About 2-4T of olive oil
• 2t pepper
• Generous Dash of salt
• 1t dried Sage
• 1t dried Oregano
• 1t dried Marjoram
• 1t Garlic powder
• 1/2 t paprika
• 1/2 t Red Pepper Flakes (optional for heat)
Preheat Oven to 450°
Put all ingredients into a bowl and mix until all the potatoes are coated evenly with spices & oil. Add more oil if needed.
Place potatoes on parchment line baking sheet into the oven (if you use a dark pan, they will get crispier and not take as long)
Bake them until potatoes are cooked (usually takes about 30-40 min) or done to your liking and as crispy (or not) as you like them.
