
An incredible dish I made the other day craving a tasty chicken salad. and it did not disappoint!
INGREDIENTS
2 Chicken Breast (I cut them in half ‘sandwich style’ to make them thinner so they cook faster and more evenly)
¼ C Butter
Seasonings
1t Salt
2t Pepper
2t Marjoram
1t Oregano
2 cloves Garlic minced
1t Garlic powder
1t Onion powder
1t Paprika
Sauce
1/4C Buttermilk
3T Sour cream
1/4C Chicken stock
A few tablespoons Freshly Grated Parmesan
1/4 medium [very] Finely sliced onion
One large crown Finely Chopped Broccoli (raw, rinsed & cleaned well)
2-3T Lemon juice
A few dashes Garlic salt
A dash Salt
Plenty of Pepper (to Taste)
I love Plenty of Marjoram and Thyme, use to your liking.
1/3C Cashews roughly chopped
I added grapes at the end! strawberries or dried cranberries or even very small chopped apples would be delicious too!
DIRECTIONS
Cook Chicken breasts in the butter and seasonings until cooked thoroughly. Let cool. Shred and set aside.
In a large mixing bowl place all ingredients for sauce and mix well with large spoon or spatula. Add in shredded chicken and mix well.
I would recommend putting it in the fridge for about 2-4 hour before eating, it tastes SO GOOD after it’s set for a while and so good cold!
It is so delicious by itself or with crackers, on a bed of lettuce, in a tortilla wrap with lettuce and hot sauce, on toasted bread with melted cheddar cheese; the options are endless and this is an incredible take on a springtime favorite!
