Easy, one pot Pasta & Burger





I don't have much to say about this except that I had these ingredients, and this is what I was inspired to make quickly! This is really hearty and not light in any sense of the meaning. But it's SO tasty and warm. Comfort food at its best.




  • 1 lb. ground beef (we use VERY LEAN grass fed burger, this makes a huge difference in fat level)

  • 2 T butter

  • 2 cups frozen shredded zucchini

  • 1 red pepper thinly sliced

  • 1 package of pasta (I used penne)

  • 4 T Worcestershire

  • 2 T garlic power

  • 1 T oregano

  • 1 t paprika

  • 1 T Marjoram

  • Salt & Pepper

  • 32 oz Beef Broth

  • 1/3 C Half & Half Room temp

  • About ½ a C of shredded cheddar cheese


 

DIRECTIONS


In large pot (I used my cast iron dutch oven) Brown beef in butter, add zucchini and bell pepper Worcestershire sauce and seasonings, cook for about 3 minutes. Add in beef broth. Bring to a boil, reduce heat to simmer & cook covered until pasta is al dente. Turn off and remove from heat. Add in half & half & finely shredded cheese. Stir well. Top with scallions or fresh basil.


Seriously. this is So tasty! and SO easy! I loved it. and the kids loved it just as much. I know what we are having for lunch tomorrow! **wink wink.
