Very Chewy Granola Bars

This is so good and so easy. So fun for kiddos to be involved in making. And the best part?! You know EXACTLY whats going into these. No guessing on ingredients. I used 100% organic ingredients to get the BEST quality!

INGREDIENTS

1/2C honey

1/3C butter or coconut oil

1/4C light brown sugar

3C oats

1/2C finely chopped nuts of your choice! (I used pecans in this batch)

1/2C raisins (or any dried fruit!)

pinch of sea salt

1/2t vanilla

1T cinnamon


DIRECTIONS


Put honey, butter/coconut oil, brown sugar in small saucepan and heat (mixing constantly) until bubbly and sugar is completely dissolved.

Mix all the dry ingredients


Pour honey/sugar mix into dry ingredients


Mix really really well.

pour into a 9x9 pan lined with parchment.

Press mixture REALLY well into the pan. Use the bottom of a measuring cup, or use wet fingers to really press the mixture. The harder and more you press, the better it’ll all stick together and not fall apart!

Put it in the fridge for at least 2 hours. Cut them into your desired size and shape.

the do get chewy when at room temp. But stay firm when in the fridge.


Store in air tight container and eat within 7-10 days!!

Really you could add whatever your heart desires in these.

mini chocolate chips

dark chocolate chunks

peanut butter in place of the butter! cranberries

pistachios!
