Sausage & Egg Coconut Puffs!


These are SO TASTY. I don't make them often enough for how easy they are. I've had this recipe for years and make them a few times a year maybe. The coconut flavor is there, but not overpowering! It's a beautiful texture and flavor mix with the sausage, salty cheese and sweet coconut! Try these!!



1lb breakfast sausage (I found I love it with either spicy pork sausage OR Jefferies Ranch grass fed beef breakfast sausage but any you love will do)


2 C shredded cheese (I use cheddar)


4 Eggs


5T butter, melted then cooled


2T sour cream


1/2 C coconut flour


1/4 t baking powder


1/2 t garlic powder


1/4 t onion powder


Pepper


1/4 t salt (I actually don't usually add this because I use salted butter instead)


Preheat oven to 375°

Melt butter and cool just until not hot anymore.

Brown and drain sausage.

In a medium bowl, mix the melted butter, eggs, sour cream, spices, baking powder and salt.

Whisk together well.

Fold in sausage and cheese.

Drop in dollops of your liking onto baking sheet about 1/2 inch apart.

Bake 15-20 min until edges are browned.

Store for up to 5 days in fridge.

This makes about 15-20 puffs depending on how big or small you like them!


NOTE: They do bake a bit greasy I don't line my pan, but you sure could. Also I take them off the pan immediately and drain on paper towel to cool.
